Dhokla: The Soft & Spongy Gujarati Delight

Ingredients:

·         1 cup besan (gram flour)

·         1/2 cup yogurt (curd)

·         1/2 cup water (adjust as needed)

·         1 teaspoon ginger-green chili paste

·         1/2 teaspoon turmeric powder

·         1 teaspoon sugar (optional, for slight sweetness)

·         1 teaspoon salt (or to taste)

·         1 teaspoon lemon juice or vinegar

·         1 teaspoon Eno fruit salt (or 1/2 teaspoon baking soda)

·         1 teaspoon oil (for greasing)

For the Tempering (Tadka):

·         2 tablespoons oil

·         1 teaspoon mustard seeds

·         1 teaspoon sesame seeds (optional)

·         8-10 curry leaves

·         2 green chilies, slit

·         1/2 teaspoon hing (asafoetida)

·         1/4 cup water

·         1 teaspoon sugar (optional)

For Garnishing:

·         2 tablespoons chopped coriander leaves

·         2 tablespoons grated coconut (optional)

Steps to Make Dhokla:

Step 1: Prepare the Batter

·         In a mixing bowl, combine besan, yogurt, turmeric, sugar, salt, ginger-green chili paste, and lemon juice.

·         Gradually add water while whisking to form a smooth, lump-free batter. Let it rest for 15-20 minutes.

Step 2: Steam the Dhokla

·         Grease a steamer plate or cake tin with oil.

·         Just before steaming, add Eno fruit salt (or baking soda) to the batter and mix gently. The batter will become frothy.

·         Pour the batter into the greased plate and place it in a steamer or large pot with boiling water.

·         Cover and steam for 15-20 minutes on medium heat until a knife inserted in the center comes out clean.

·         Once done, let it cool for 5 minutes, then cut it into squares or diamond shapes.

 

Step 3: Prepare the Tempering (Tadka)

 

·         Heat oil in a small pan and add mustard seeds. Let them splutter.

·         Add curry leaves, green chilies, sesame seeds, and hing. Stir for a few seconds.

·         Add water and sugar, then pour this tempering evenly over the steamed dhokla.

 

Step 4: Garnish & Serve

·         Sprinkle chopped coriander leaves and grated coconut for extra flavor.

·         Serve warm with green chutney or tamarind chutney.
